One big electric fan or two small ones to cool an LS3, and are Taurus junkyard fans any good?

Either way, a shroud covering the core matters as much as the fan choice. Speedway notes a big single fan may cover a square-ish core better, but its deepest point can end up closest to the engine, so check clearance.
Wiring: use a relay for each fan, triggered by a thermostatic switch or your ECU's fan output. Speedway warns that running two fans off one standard relay can blow its ~30 A fuse when both start at once; a single high-current relay works if space is tight. You can stage the second fan off the A/C compressor or a manual switch.
